I dry roast my Trinidad Scorpion chilies in a pan on medium high and keep turning them over to keep the heating even. This also drives out any extra moisture so that the ground chilies get into my pepper grinder without sticking.
For two cups of instant refried beans I use 1 teaspoon garlic powder, 1 teaspoon of freshly ground cumin, 1 tablespoon of ground chili pequin, 2 tablespoons of ground chilitepin, 3 tablespoons of freshly ground Trinidad Scorpion powder. It makes great tostadas and you can use the meat seasoned with milder chilies like guajillo chilies and still have plenty of heat. I eat Mexican food between 6 and 7 days per week because chilies are an important part of my diet.
Since I eat more chilies than I can grow, I like the prices at the Sonoran Spice Company because where I live now, I couldn't find Trinidad Scorpion chilies anywhere, especially at $69 per pound!
