Tilapia With Ghost Pepper Relish


- 1 Tbs. plus 1 tsp. olive oil
- 1 chopped fresh roasted red bell pepper
- 1-1/2 Tbs. red wine vinegar
- 1 scallion, minced
- 1 clove garlic, crushed
- 1 Tbs. parsley, minced
- 1-1/2 tsp. capers, drained
- 1/4 tsp. salt
- 1/8 tsp. Sonoran Spice Ghost Pepper Flakes
- 4 Tilapia fillets

Turn on broiler. Combine first 7 ingredients and half the oil in a mixing bowl. Mix thoroughly and set aside. Brush fish with remaining oil. Season with salt and pepper to taste. Arrange fish on a broiler pan and broil 7-9 minutes, or until fish flakes easily. Serve fish topped with red pepper relish.
