Living in Arizona I love making Poke bowls for lunch or dinner. The cold veggies and salmon help me relax from the 110-degree weather. Easy to create and so fulfilling. These bowls started to become increasingly popular, making their way from Hawaii.
Poke has many similar ingredients to sushi, cucumber, avocado, rice, and salmon. We spice up the dish by creating a habanero mayo, using Sonoran Spice Habanero Powder. Habanero has a pleasant flavor profile known for its fiery burn and tropical taste. Adding fresh cucumber is going to add the crunch and texture this meal needs. Cucumbers promote hydration and are high in nutrients. The Avocado is rich in potassium, fiber and can assist in lowering blood pressure. There is always a risk to eating raw fish, you should always use sushi-grade salmon.
Salmon Poke Bowl with Habanero Mayo
Ingredients
- 3 cups Cooked Rice
- 1 Ripe Avocado Sliced
- 1 Cucumber, sliced
- 14 oz Sushi Grade Salmon Cut to bite sized pieces
- 2 tsp Sriracha Sauce
- Black Sesame Seed Use for garnish
For Habanero Mayo
- 2 tbsp Mayonnaise
- 1/2 tbsp Sriracha Sauce
- 1 pinch Sonoran Spice Habanero Powder
- 1/2 tsp Sesame Oil
- 1 tsp Sugar

Combine all ingredients in a bowl and mix well.

The taste should be sweet, spicy, and slightly tangy.

Set aside until needed.
For Spicy Salmon

Mix together salmon cubes, soy sauce, and sriracha sauce. Give a quick mix and set aside.
Assemble the Poke Bowl

Add cooked rice in a bowl

Top with avocado slices, cucumber slices, spicy salmon, and habanero mayo.

Garnish with black sesame.
