With its bright green color, the Hatch green chile is instantly recognizable. They are usually about four to six inches long and curved. These hot peppers are hot, but not too hot, and the pride and joy of New Mexico.
Hatch green chiles are named after the Hatch Valley region in New Mexico where they’re grown. Since Hatch is sometimes known as the Chile Capital of the World or the Napa Valley of green chiles, you know that any hot pepper that comes from this area has to be good! Hatch, New Mexico may be a small town of fewer than 2000 people, but it’s had a major impact on chile pepper culture. The popularity of the Hatch chile may have started in New Mexico, but it’s spread all across the United States and even around the globe.
The growing season for Hatches is about three summer months, with harvest usually toward the end of July or the beginning of August. Sometimes harvest doesn’t happen until September. When it gets colder, harvesting has to stop but this usually isn’t until October. Because these peppers are large with thick walls, they have a very short cultivation season.
Hatch peppers can range on the Scoville Scale from 1000 to 8000 Scoville Heat Units (SHU) which is considered a mild chili pepper. However, some can be much hotter. For comparison, jalapeños are usually between 2500 and 8000 SHU. So they are pretty similar in heat, but the average Hatch chile is milder than the average jalapeño.

I lived in New Mexico until I was 23 years old. Needless to say, I cooked alot of New Mexican food and Hatch hot green chili was my favorite staple. I have lived on the east coast for many years and have found it impossible to find good, hot green chili. I have ordered powdered green chili online from various places and have always found it disappointing. I even purchased what was labeled as Hatch green chili seeds and grew my own. Though it tasted like green chili, there was no heat in it whatsoever. On a recent trip to Santa Fe, I purchased a box of dried Hatch green chili chicken soup mix. I brought it back to New York State and cooked it up. It was amazing! I noticed the green chili in the mix was dried chili "flakes". So I decided to google "Hatch Green Chili Flakes" to see if perhaps I could find some to purchase. I ran across an ad for Hatch green chili flakes from Sonoran Spice Company. I figured I'd give it a try and ordered a jar. When it arrived a made a batch of green chili stew. WOW! Nothing takes the place of Hatch green chili. These flakes are delicious and ready to add to any dish. My go tos are putting flakes in quesadillas and scrambled eggs and on pizza, but you can add them to anything. I use them in soups and on on fish. Use your imagination. Delivery was quick.

Hatch green chilies are the best in the world. Hatch green chili flakes are wonderful to mix with Hatch red chili flakes and they will go fantastic on tamales and soups on tacos and any other wonderful dishes that you choose to make.
